The Al-Wissam solar bakery, is located in Remhala, Lebanon, 27km south of Beirut. It uses a roof-mounted solar trough array to heat an oil-filled pipe positioned along the array to 300 °C (572 °F). The hot oil is then directed to the kitchen where it heats convection ovens for baking.
The City of Remhala has a history of intermittent electricity availability from the power utilities. Often, electricity is provided only one hour per day. This has required homes and businesses to rely on using diesel generators to provide back-up power. The solar consultants, Partners with Sun designed and oversaw the installation of the new solar array. The bakery owner, Wissam Shamseddine, has discovered they have been able to cut their diesel usage by 80% with the new system. Toufic Hamdan, Partners with Sun co-founder, explains; "We aim, between now and 2030, to bury the last boiler operating on diesel or electricity in food and beverage production,"
