Dr. Minal Kabra is a dentist practicing in the Jalna district of Maharashtra, India. She had begun getting requests for a source of healthy snack options from the parents of her young patients. Discovering there were few products available, with co-founder, Vaibhav Dugar, they decided to create a business to meet the need. That company is called Kivu, and they bake vegan sugar-free cookies.

They also saw the business as an opportunity to be able to help women in the local community be able to find employment as bakers, and benefit with a fixed percentage of the revenue.

As of 2021, they have products in 72 stores in 18 cities. The business has several different cookie flavors available, all with no artificial ingredients, and there are plans to include a line of savory food items.

Considering which baking method would best benefit the environment, the company decided uses solar cookers for the production. Minal is married to Vivek Kabra, a long-time solar cooking advocate in the region. Kabra explained using solar energy for baking prevents five gm of CO2 for every cookie that otherwise would have been emitted from traditional fuel-fired ovens.
